We're often asked about "Natural Prosecco"...
... and we know Prosecco is a firm winter favourite here in the UK, but if like us you find the majority of commercially available Prosecco to be too sweet and fruity, Col Fondo is for you!
Unlike Prosecco and Champagne, Col Fondo isn't filtered or disgorged. The second fermentation takes place in the bottle, and results in a cloudy, slightly funky, less sweet and more delicate sparkling wine. In essence , Col Fondo is the more traditional (or Ancestral) way to produce what we see now as Italian Prosecco.
