This is the oaked version of their new flagship Pinot Noirs range.
Super fresh and elegant with proper aging potential. Drink now or let it develop for 5 - 10 years, if that's your thing.
Nothing added, with no fining or filtration, containing only natural sulphur from the skins and yeasts from wild fermentation. 100% vegan and veggie-friendly.
Notes from winemaker Ben Walgate of Tillingham:
"Bright cherry red in colour. An ethereal red with hints of cacao and violet. Elegant on the palate with damson and spice. More generous than its unoaked cousin.
Suitable for vegetarians/vegans: YES
80% destemmed and 20% whole bunch, fermented in bins for five days and then transferred to 25l barrel and 1200l fuder (large, German oak vat), for six months. The two components were then blended in stainless steel and shortly afterwards bottled by gravity with a small sulfur addition.
Grape History: Grown at Crouch Valley, Essex. Conventional but low input viticulture.
Drink now and over the next five years. Serving temperature 13–15 degrees Celsius."
