Sparkling natural rosé wine made from organic Pinot Noir that combines the best features of classic sparkling wine and those of Pet Nat, with the unmistakable signature features of Bikicki’s technologist and winemaker Oszkár Maurer. Nikka has been aged in bottle for two years and disgorged, and since the sediment has been removed the primary aromas are complex rather than fermentative with vibrant smooth bubbles and fruit aromas of cherries, raspberries and rosehip.
 
Naturally sparking, serve ice cold straight from the fridge and open slowly!
 
About the winemaker:
Bikicki’s vineyards are located in Banostor village in the ancient wine region of Fruška Gora, Serbia facing the Danube River on the edge of Fruška Gora national park. Đorđe works together with technologist Oszkár Maurer and winegrower Jelena Burmudžija to produce incredible wines of character and clarity that express the terroir from which his grapes come. Technologist Maurer ferments exclusively on natural yeasts and without additional intervention in the cellar. Bikicki’s philosophy in wines is balance and elegance - he believes in using natural principles to create wines that do not have bret or VA, preferring to produce clean wines which express fruitiness the terroir provides his grapes.

“Pink sparkling wine of tempting color of ripe strawberries, generously provides the same character on the nose. The fragrance evokes an abundance of ripe strawberries, chokeberries and dark June cherries, followed by notes of blooming peony and Mediterranean herbs, and a noble tone of aging on a yeast precipitate brought by brioche and homemade yellow patisserie. Lively bubbles, vibrant freshness and plenty of fruity juiciness in the mouth invite you to take a new sip. The fruity taste of red currants, cranberries and cherries stays on the palate for a long time, with fine notes of biscuits and a bit of minerality. Playful, but structural and complex wine with a constant and deep taste.”
